Peru Cafe del Valle Washed Coffee
Peru is one of the world's leading exporters of organic Arabica coffee. Smallholder farmers in the country create some exquisite specialty coffees thanks to their high altitudes and excellent lands. Coffee was introduced to Peru in the 1700s. The majority of coffee is processed on farms before being sold to a middleman or cooperative.
Amazonas established the Asociación de Productores Agropecuarios "Café del Valle" in 2019 and has been working tirelessly to reach their goal of becoming the region's premier coffee producer since then. The cooperative provides producers with technical assistance and agricultural outreach. Members are given assistance in order to boost production and quality in a sustainable manner.
On their own farms, Peruvian coffee farmers often utilize the fully washed method. Cherry is often pulped, fermented, and sun-dried. Smaller farmers used tarps on the ground or beneath the roofs of their houses in the past. Cooperatives are increasingly building centralized drying facilities, usually raised beds or drying shelters, where members can dry their parchment. Farmers are starting to implement these technologies on their own farms, with drying greenhouses and parabolic beds becoming increasingly widespread as farmers shift their focus to specialty markets.
Coffee will be sold in parchment to the cooperative after drying and a quality control staff monitors all incoming coffees to ensure consistency at the warehouse.
